Vegetarian Red Sauce

Vegetarian Red Sauce

1 ½ onion, chopped
6 cloves garlic, minced
1 small zucchini, thinly sliced
1 yellow squash, thinly sliced
Safflower oil
8 oz. fresh mushrooms, sliced
45 oz. organic tomato sauce
3 teaspoons organic sugar
  2 teaspoons Chef’s Shake Blend *
1 ½ teaspoons ground mustard
1 teaspoon Italian seasoning
1 teaspoon salt (Redmond Real Salt)
1 teaspoon black pepper
1 bay leaf
½ teaspoon cumin

 

  1. Saute onion in oil for approx. 3 minutes (low heat).
  2. Add zucchini, yellow squash and garlic.   Saute approximately 3 minutes.
  3. Add mushrooms.  Saute a few more minutes.
  4. Add tomato sauce, sugar and spices (remaining ingredients).  Simmer approximately 45 minutes.  Serve over pasta or rice.

I used Lundberg Organic Brown Jasmine rice using homemade chicken broth instead of water.  It has enough flavor that you don’t need to add salt and butter.  GREAT COMBINATION!

*Chef’s Shake Blend consists of onion, black pepper, garlic, carrots, orange peel, tomato, celery seeds, red pepper, parsley, basil, marjoram, bay leaf, lemon oil, lemon juice powder, oregano, thyme, citric acid, savory, rosemary, cumin, mustard and coriander in it.
